Dee's Blueberry Muffins

Prep 20 minutes / Bake 1 hour 10 minutes

  • 1 C Whole wheat flour
  • 1 C Dee's Cereal
  • 1 Tbsp Baking powder
  • 1/4 tsp Salt
  • 1 Egg, slightly beaten
  • 1 C Skim milk
  • 1/4 C Brown Sugar
  • 1 Tbsp Vegetable oil
  • 2 Tbsp Applesauce
  • 1 tsp Vanilla
  • 1 C Blueberries
  • 3/4 C Powdered Sugar
  • 1/2 tsp Vanilla (for glaze)
  • 1 Tbsp Milk
  1. Preheat oven to 400 F. Line muffin cups with cupcake papers.
  2. Combine flour, cereal, baking powder and salt. Add blueberries and toss to coat with flour mixture.
  3. Combine egg, milk, brown sugar, oil, applesauce and 1 tsp. vanilla. Whisk lightly to blend.
  4. Stir wet ingredients into the dry ingredients, stirring until moistened.
  5. Gently spoon batter into prepared muffin pan. Bake 15-20 minutes or until lightly golden. Remove from oven and cool on wire rack for 3 minutes. Remove muffins from pan and place on wire rack. Drizzle glaze over warm muffins.
  6. GLAZE: Combine powdered sugar, 1/2 tsp. vanilla and 1 Tbsp. milk. Add additional milk as needed to achieve desired consistency.
