Coconut-nut Granola Recipe

I love the sweet, nutty crunch of the coconut and nuts in this healthy granola recipe. This granola recipe is packed with almonds, walnuts, and wheat germ, which combine to deliver a fantastic crunch. This granola recipe also has coconut and honey to sweeten up the mix, but it is not overpowering. Between the oats, nuts, coconut, cranberries, and wheat germ, this granola recipe is loaded with vitamins and minerals which will keep your body functioning at top level performance. I keep a bag of this granola recipe in my desk drawer so I can enjoy a healthy snack to get me through the long work day.

Granola Recipe Ingredients:

  • 5 cups rolled oats
  • 2 cups coconut, shredded
  • 1 cup pecans, chopped
  • 1 cup sesame seeds
  • 1 cup almonds, slivered
  • 1 cup walnuts, chopped
  • 1 cup wheat germ
  • 1 1/2 cups honey
  • 1 cup unsalted sunflower seeds
  • 1 cup canola oil
  • 1 cup raisins
  • 1 cup cranberries, dried

Granola Recipe Directions:

  1. Preheat oven to 325 degrees
  2. Combine almonds, walnuts, sesame seeds, pecans, oats, wheat germ, coconut, and sunflower seeds in large bowl, stirring well
  3. Stir oil and honey together in small saucepan over medium heat
  4. Stir until well blended together
  5. Pour liquid mixture over dry mixture, stirring together well
  6. Spread evenly onto two cookie sheets
  7. Bake 20 minutes, until golden
  8. Remove from oven
  9. Stir in raisins and dried cranberries
  10. Allow to cool
  11. Stir again to break up clumps

This granola recipe has the best sweet crunch. Fix up one batch of this tasty granola recipe and you are sure to be hooked. After the first time you cook this granola recipe you may want to adjust some of the ingredients to fit what you like the most. I know some people do not like cranberries, but they are very good for you, so do not leave them out unless they really bother you.
