Cashew Coconut Granola Recipe
I love the great taste and crunch of fresh nuts in a good granola recipe. Thats why this healthy granola recipe is one of my favorites. This healthy granola recipe is loaded with oats, almonds, coconut, cashews, and sweetened with a touch of honey. It is one of the best granola recipes around, full of protein and fiber to provide your body with nutrition to keep it going strong all day long. Whether you are out for a bike ride or jog, or working behind a desk and just need a snack, this is tasty granola recipe will get the job done, providing your body with the energy it needs to stay active throughout the whole day.

Makes: 6 cups
Granola Recipe Ingredients:
- 2 cup Old-fashioned oats
- 3/4 cup Whole almonds; halved
- 1/2 cup Sweetened flaked coconut
- 1/2 cup Raw cashews
- 1/3 cup Firmly packed brown sugar
- 1 1/2 tsp Ground allspice
- 1 tsp Ground cinnamon
- 1/4 cup Unsalted butter
- 2 tbsp Honey
- 1 cup Packed pitted dates, chopped
Granola Recipe Directions:
- Preheat oven to 300 degrees
- In large bowl mix oats, coconut, almonds, cashews, allspice, brown sugar, and cinnamon
- Melt butter and honey together in saucepan over low heat
- Pour liquid mixture over dry mixture, stirring together thoroughly
- Spread evenly onto baking sheet
- Bake 20 minutes, stirring occasionally
- mix in dates
- Bake additional 15 minutes, stirring occasionally, until golden brown
- Allow to cool
Try this granola recipe with some milk or vanilla yogurt... mmmmm. Another thing that works great with this granola recipe is to enjoy it with some fresh cut fruit - I like apricots.
