Amaranth Flour Granola Recipe (Gluten-Free)
This is a great granola recipe no matter what, but it is especially good if you suffer allergies to gluten, as many do. Amaranth grain is naturally gluten free, so no need for concern with this granola recipe. The amaranth flour in this granola recipe has the added benefit of unusually high levels of protein which help your body stay healthy and energized. Iron is also plentiful in the amaranth flour in this granola recipe. In combination with the other natural ingredients in this healthy granola recipe, many important nutrients are provided to the body. Granola Recipe Ingredients:
- 1 1/2 cup amaranth flour
- 1 cup chopped nuts (walnuts, almonds, cashews, etc)
- 3/4 cup mashed banana or pureed fruit
- 2/3 cup raisins
- 1/2 cup peanuts
- 1/2 cup unsweetened shredded coconut
- 1/2 cup potato starch (potato water)
- 1/2 cup sunflower seeds
- 1/3 cup light tasting oil (or walnut oil if available)
- 1/4 cup maple syrup or honey
- 1 tbsp lemon juice
- 1 1/2 tsp cinnamon
- 1 1/2 tsp pure vanilla extract
Granola Recipe Directions:
- Preheat oven to 300 degrees
- Mix flour, potato starch, walnuts, peanuts, sunflower seeds, cinnamon and coconut in large bowl.
- Mix bananas, syrup, lemon juice, oil, and vanilla in a small bowl.
- Stir liguid into dry mixure
- Spread evenly into oiled pan
- Bake for 45 to 60 minutes, stirring occasionally until golden brown
- After cooling, stir in raisins
Gluten allergies are not a problem with this granola recipe because it is made with amaranth flour, which is naturally gluten-free. This granola recipe tastes great - sweet and crunchy! And it is surely a favorite around my house.
